So many biryanis, so little time… With potatoes and boiled eggs. Dum biryani with lots of masalas and raita. With salan on the side or just plain meat and rice. Everyone has a favourite.
The question, then, is who does it best? Before we kickstart this battle of biryanis, we should make clear that ‘vegetarian biryani’ holds no place in this roster. We’re talking about the best biryanis and not pulao, remember?
Is it the short-grain samba rice of the Nawabs of Arcot that’ll take the crown, or the pukki style meat and rice of Lucknow? Or will aromatic Hyderabadi biryani steal the show?
