Which state makes the best biryani in India? 'Veg biryani' not included
Chef Shipra Khanna and stand-up comedian Supriya Joshi brace themselves for the battle of the biryanis
So many biryanis, so little time… With potatoes and boiled eggs. Dum biryani with lots of masalas and raita. With salan on the side or just plain meat and rice. Everyone has a favourite.
The question, then, is who does it best? Before we kickstart this battle of biryanis, we should make clear that ‘vegetarian biryani’ holds no place in this roster. We’re talking about the best biryanis and not pulao, remember?
Is it the short-grain samba rice of the Nawabs of Arcot that’ll take the crown, or the pukki style meat and rice of Lucknow? Or will aromatic Hyderabadi biryani steal the show?
When everything sounds (and tastes) this delicious, we knew we needed expert help. Chef Shipra Khanna and stand-up comedian Supriya Joshi take on the challenge, diving into bowl after bowl. Even risking a mouthful of elaichi that pops up without warning. Khanna brings her expertise, as the winner of MasterChef India (season 2) and author of books like Sinfully Yours and The Spice Route, and Joshi, also known by her online moniker Supaarwoman, gets her quintessential humour and relatable real-life experiences to the table for the ultimate food fight.
